Directions:

General:

  • 1.

    Peel and pit pears (preserve stalks), add to simmering wine with anise, halved vanilla pod, cinnamon, chilli and 100g sugar.

  • 2.

    Cook until tender, make sure pears are cooked evenly.

  • 3.

    Melt chocolate in a double boiler, add cream.

  • 4.

    Mix well until even, leave to cool.

  • 5.

    Beat cooled mixture, refrigerate for about 1 hour.

  • 6.

    Boil water with sugar, candy kumquats in syrup until tender.
