In a bowl, whisk sugar together with cinnamon.
Once well combine, sprinkle half of the mixture over a pastry board.
Lay out the puff pastry on it, sprinkle with the other half of the mixture.
Roll it out gently.
Fold both sides of the pastry, so that the ends meet in the centre, then fold again in the same way.
Finally, fold it in half to form a small log.
Cut it into 8mm/0.3in slices.
Bake in 190°C/375°F for 20 minutes.
